Gimme S'more!

The "Recipe of the Day" is for my über-popular Vegan S'mores Muffins.

I concocted the recipe for these muffins about a year ago and have since made them too often to count. They're a huge hit every time, especially with kids.
The recipe is in my archives, but I'm posting it again today for two reasons:

1. The post is so old that most of you probably didn't read my blog back then, and thus missed this simple, but great, recipe.

2. Due to the bothersome invention of the concept known as Final Exams, I don't have time to think up a creative new post for today.

So enjoy the muffins. And bake some extras for a poor chocolate-covered vegan who is up to her chocolate-covered ears in studying!


Little Vegan S'more Muffins

Ingredients:
2 c Graham crackers, crushed
2 t Baking powder
1 c Soy milk
Egg replacer for 1 egg
2 T Agave
Chocolate chips

Optional: Marshmallow fluff (Surprise-- Smuckers' Marshmallow topping is vegan! Ricemellow Creme, which can be found here or here, is also vegan.)

Directions:
Preheat oven to 400 degrees F.
Grease 12 muffin cups or line with paper muffin liners.
In a large bowl, combine cracker crumbs and baking powder.
Add the agave (tip: spray your tablespoon with oil spray so the Agave slides off easily).
In a separate cup, stir together the milk and egg replacer.
Stir this into the dry ingredients, mixing just until moistened.
Spoon batter into prepared muffin cups and stick some chocolate chips into each.
Bake in the preheated oven for 15 to 18 minutes, until a toothpick comes out clean.
Let stand for 5 minutes.
Spread marshmallow fluff over the muffins, if you so desire.
Yield: 8 Servings


















I think they taste just as delicious when they're un-frosted.
























P.S. If you're looking for vegan graham crackers, this brand is vegan. Alternatively, you can make your own (recipe here). I *think* Keebler also makes a vegan graham cracker... but don't quote me on that.

I just happen to have ricemallow in my pantry now! Smores just make me feel all cozy inside.

My birthday is in September too! (the 8th) We should just have a big party for the both of us....

Wow, I don't think I've had marshmallow fluff since I was a kid (oh, the wonders of the peanut butter & Fluff sandwich back then!) I did just so happen to pick up a bag of Ghirardelli chocolate chips tonight, so I may be testing this recipe out on my fam this week.

Good luck with your final exams, girlie!! I remember those days and do not envy you one bit... the best motivator, I've found, is to just keep focusing on the dulces you will reward yourself with immediately upon finishing :)

Wahey- I can consume some more tasty chocolate goodies : ) I will have to make the recipe for the graham crackers as I don't think that you can buy them here in the UK. I think my whole family would love them- I can't imagine they would last long (in fact I am not sure that we would bother waiting for them to cool down- I imagine they are fabulous warm from the oven!)

Smuckers' Marshmallow topping is vegan?! Every time I pass by the marshmallow section, I have a flashback. haha! That's one of the things I feel like I miss out on.
Does the fluff stand well at room temperature. Meaning, is it transferable to a camp ground...if you see where I'm getting at..;-)

Wow, I wish I had some vegan graham crackers and chocolate chips and marshmallow fluff so I could make these right now! They look simply wonderful. I hope your final exam preparation is going well! I'm relaxing tonight - I had a heck of a last two days concerning schoolwork overload, too. Ugh.

I'm glad you liked the banana bread! I just bought a microplane grater, so next I'm going to get some fresh nutmeg. (It really makes all the difference, which I did not discover until last week!)

My favorite graham cracker is the Oat Bran variety of Health Valley versus the Amaranth one you provided a link for. Yummy!

those look so simple and wonderful! I wish I could find vegan graham crackers around here, though...

oh, did I mention I finally tried the Belsoy puddings and you were right, they're *amazing*! My favourite is the caramel one! I think the cups need to be twice the size that they are. ;)
