Now that I've creeped you all out, I'll move on to more fun things.
I am somewhat of a mad scientist in the kitchen. Although I do enjoy picking out recipes to make, I'm not so fond of actually following said recipes. It's much more exciting to treat the kitchen as a giant science laboratory; throw a bunch of ingredients together to see what happens... and hope that nothing explodes in the process! (Bonus points if you don't have to turn on the oven to make your creation.)
Yesterday, I created a simple snack. Sure, it wouldn't qualify as a gourmet recipe, but it adheres to my three principles of good food-- quick, healthy, and oh-so-delicious. Like my friend Alice in Veganland, who is renowned for whipping up uncomplicated meals, I subscribe to the notion "simple is best."
Apple Pita Pocket Pie
Ingredients/Tools
1) 1 pita (I used Ezekial 7-grain)
2) 1 container applesauce (I used Whole Foods unsweetened applesauce. The term "unsweetened" is misleading; it's actually quite sweet.)
3) a few dashes cinnamon
4) a grill pan, panini-maker, or microwave
Directions
1) Spread the applesauce onto the pita, and sprinkle with cinnamon. (You can probably use a sliced apple in place of the applesauce, if you feel so inclined.)
2) Grill the sandwich (I really wanted to use my panini-maker for this, but couldn't find it, so I used the microwave).
Variation-- Apple Pie Fondue!
Just microwave a pita pocket until it's warm and soft, then cut/rip into bite-sized pieces and dip away in the cinnamon-sprinkled applesauce (a good idea for little kids). Ok, so this variation isn't exactly creative... but how fun does the title sound?!

It's not the prettiest of snacks, but try to imagine that it made my house smell like freshly-baked apple pie. Starting to look more appealing now? I thought so.

Wow, you weren't using Google Reader?? You poor thing! It must've taken hours. I love it, it updates as soon as someone posts so I keep a tab open on Firefox and it's a snap.

I didn't know you didn't know about Google reader!! Sorry, I would've recommended it. I've been using it for a while. I have this personalized "iGoogle" page that I use as my browser's homepage which has a little Google Reader widget on it, so I immediately see it when one of the blogs in my "favourites" category is updated. Useful! On the other hand, it does tempt me to procrastinate by lurking (yes, I'm a lurker sometimes as well, hehe) on foodblogs while I'm busy with other things. But I still like Google Reader, it's more efficient than visiting the websites every day.
Anyway, that pita pie! I don't think I've ever used pita in anything sweet, but apple and cinnamon make almost anything taste delicious - good idea! Have to try this when I'm craving apple pie but don't have any of that on hand... Luckily for me, there actually is some of my Mom's apple pie in the kitchen right now for my Dad's birthday tomorrow! :)
Yep, simple is best :-), and your apple pita pocket pie is the perfect example for it! But there's something in the mixture of apples and cinnamon...it always tastes like apple pie!
Google reader is great, I tell you. Remember I told you I have a "2comment" tag? I also have "2cook", and different ones according to the ingredients ("sweets", "chickpeas", "tofu" and so on). So whenever you post something tasty that I need to try, I just tag it, and it's so much easier to find later!
To "CCV the Lurker" -
Um, YUM! Poor applesauce - I always forget that it exists, then randomly have it somewhere and remember all over again how satisfying it is! I'm wondering if chopped nuts or a schmear of almond butter might work with this recipe, or do you think the taste would be too overpowering?

Great minds think alike because I actually just had an almond butter and applesauce sandwich on pita bread a few days ago, and I loved it!
Yes, sometimes simple IS best. And if you were in the mood, you could always make your own applesauce (with the processor, even!) ;) (And to echo what everyone else has said--yes, Google reader seems to be a "must" these days!)

i have mixed feelings about google reader... while it does sound convenient, one of my favorite parts of blog-visiting is being able to take in the layout of the blog.
I never heard of Google reader before ... hrmm I guess I'm living in a shell .. ^^ The apple pita pocket pie looks really yummy - it's winter here, all I want is warm comfort food ... hahaha! Hope you have a great weekend katie!!
What a great idea for a snack! I also don't use google reader, I use netvibes instead. But it's a similar method of archiving blogs, online newspapers and stuff like that.

Sounds yummy. I mostly relegate applesauce to baking and then forget it's in the cabinet.

wow i thought everyone used google reader :o Its the only way to keep up to date with a whole bunch of blogs. And (Re. RRV) I don't think it means that you don't end up visiting the person's site either - I always read the posts it tells me about on location!
