After my Tofu Scramble post, I was asked, in an email, to share some of my other "post-run" breakfasts. (I'll call them "post-run" breakfasts to distinguish them from my "pre-run" breakfasts, which, if you're curious, usually consist of a bistro burger patty or black bean burger patty and some fruit.)
Here are some of my breakfasts:
1. Oatmeal or Oat Bran-- One of my favorite ways to eat these is simply cooked with soymilk, water, and a little salt. But, if I'm feeling more motivated, here are the links to my other favorite oatmeal/oat bran recipes: Peanut Butter and Banana Oatmeal Fusion, Oatmeal Raisin Pudding, Banana Nut Bread Oatmeal, and Peaches 'n Cream Oatmeal Dream.
2. Banana Bread Blender Cereal-- and Ricki, of Diet, Dessert and Dogs, had the terrific idea to eat this heated up, which takes the taste to a whole new level! (For the summer, though, I still like to eat it cold.)
3. Non-breakfast foods (stir fries, sandwiches, leftovers, etc.)
4. And sometimes, I like to eat Cheeze Toast!
Yes, there are three pieces of toast on my plate. Especially since I'm so little, it's really important to take in the proper amount of fuel after running so hard. Also in the picture: juicy watermelon, crunchy almonds, and perfectly-steamed broccoli (because what better combination is there than broccoli and cheeze?!)
I like to cut my cheeze toast into bite-sized pieces, because that's how my dad made it for me when I was little :o).
Plus, that way, I can do this: 

Broccoli-Cheeze Bites!!!
Little Vegan Cheeze Toast
Ingredients:
Three slices whole-wheat bread
1 and ½ ounces cheddar-flavored Vegan Rella
Directions:

2. Put the bread into a toaster oven. (I like my toast to be kinda soft, not hard and crispy, so I take the bread out after less than a minute—just long enough to melt the cheeze. Now, if my sister were the one making the toast, those poor bread slices would be in the toaster for eons!)

ooo~I've never tried adding salt to my oatmeal before--I imagine it'd taste like creamy soup?

How can you have so much food for breakfast?! I have a kiwi, 3 cookies and a coffee... My breakfasts are soo boring! ;-)

I use to make cheese toast all the time when i was younger... now i am excited to bring it back into my meals! By the way how much do you run? Are you training for a race or anything? I too am a runner so I always love meeting/talking to other runners!

Thanks for the breakfast ideas. I love that you eat non-breakfast food like stir-fries for breakfast. That makes me feel a lot better about preferring chips and salsa for breakfast better than cereal or other 'traditional' breakfast foods.

I just eat fruit with flax seed sprinkled on it for breakfast everyday(I'm so boring!). Your breakfasts are so interesting, and I love the idea of eating non-traditional things for breakfast.

Salt is a must for oatmeal! It's a little salty and a little sweet; awesome.
Re: the cheeze toast. You'll think I'm crazy, but put grape jelly on the toast before the cheeze and cook it all together. It was a staple at my house when I was a kid.

Mmm yum!! I have never had cheese toast before, and only once have I had grilled cheese since becoming vegan.
I have been stuck in a cereal+granola+dried fruit+soymilk rut. I am going to have to go and get some "cheese".
I love having oatmeal for breakfast as well - I like to mix it with dried fruit, maple syrup, and crunchy salted PB. So good! I will have to try the cold banana bread kind though, I think it would taste better after running, I always like something refreshing.
I was wondering the same thing as Christie, are you training for anything? Have you ever raced? If not, you should. Its so much fun!

Broccoli for breakfast sounds like a cool slogan. My breakfast consists of black coffee which I'm not quite sure goes with broccoli but maybe I should give it a try.
LOL, I went to an organic store today (just found it via the internet) and I found VEGAN CHEESE, Soy Delicious ice 'cream', Amy's Soup, Eden's (something) and Almond milk!!!!!!!!!!!!!!!!!!!!!!!!! I was soooooo happy!! BUT there's a catch, they cost SO MUCH!
The vegan cheese called cost about AU$8.56. The Soy Delicious ice cream, i think it was 1L cost AU$11.20, Amy's Soup and other canned stuff cost around AU$5.00 and wait for this, Almond milk cost AU$12.90!
My mum saw that I really wanted the almond milk and she secretly bought it for me when I wasn't looking - I felt so bad after :0( I was sweeten with agave, even though I'll like it better if it's not sweetened - it's still delicious! Man.... how much does almond breeze cost in the US?!
hahaha, back to your post! Yummy broccoli and cheeze toast! Ahh, great to see someone eating as much toast as me :0) I eat two servings of cereal(except oatmeal for some reason)coz if I don't my stomach will be growling at 9 am!!

katie, i had two questions for you. do you photograph ALL of your meals like kath on katheats or do you only photograph the meals you post on here because i know quite a few people who photograph ALL their meals that dont have blogs just to see their daily intake is. and do you count calories or just eat when your body says its hungry and sop when your full, or do you eat by the clock? SORRY FOR THE WEIRD QUESTIONS! :o/

I was thinking of doing a smoothie like your blender cereal with Irish oatmeal, so I think I'll try my favorite sweet cereal in it! Sounds yummy.

Christie— Ooh I love talking to other runners too! I’m actually not training for a race or anything. I just run for fun, basically because I have way too much pent-up energy if I don’t! I used to run cross-country in high school, but sometimes I got too caught up in the competition aspect, which made it stressful for me when I didn’t win… so now I just love to do it by myself :o).
Justnathan—Hmm, actually, that sounds really interesting! I’ll have to try it. It sounds like it’d be good because of the sweet-salty combination. Thanks for the idea!
(P.S. You reminded me that when I was little, my mom used to make a crock pot dish that consisted of grape jelly and hot dogs! Same idea, I guess—the sweet and salty combo.)
Robin—Here are some of my favorite snacks:
Clif Z bars
oatmeal or oatbran made simply with water, soymilk, and a little salt
banana-blender cereal (the one I mentioned in this post)
peanut butter spread on a banana
unsweetened applesauce, with a little cinnamon mixed in
Gnu bars (cinnamon raisin)
chocolate pudding cups
ANYthing I make in my Vitamix (i.e. smoothies or fruit “ice cream”)
fresh or frozen fruit
almonds or cashews or pistachios
As for steaming broccoli, there are lots of different ways, so if you asked someone else, they’d probably give you a broccoli in a microwave-safe dish, then put just enough water in to cover the stalks. Then I put the lid on the dish and microwave for around 6 minutes (depending on how much broccoli I’m steaming. I microwave longer if there’s a large amount of broccoli). I let it sit for about 2 minutes, then I drain the broccoli. Hope that helps!
