Rat-a-tat-ouille

A while ago, Ruby Red Vegan told me I just *had* to see the movie, Ratatouille. So I took her advice one night and, along with my parents (and Molly, who adores tv-watching), saw the film. The movie was adorable-- just like Ruby Red said it'd be. But I was left with a HUGE craving... for ratatouille, of course!


So the very next day, I bought all the ingredients to make my own ratatouille. It sure cured my craving; the only thing missing was Remy the Rat to help me cook.


Remy, if you're out there, I'm in the market for a sous chef. (Although my mom *might* not be too receptive to the idea of a rat in the kitchen...)


As the following picture shows, I made an enormous batch of ratatouille. Because cooking is not my favorite thing, when I do cook, I like to make extra servings and freeze the leftovers. These particular leftovers lasted quite a while!




Ratatouille, fluffy brown rice, and lime wedges (after I took this picture, I spritzed some lime on a little of the rice, decided the flavor was NOT complimentary to the ratatouille, and that was the end of the pretty lime wedges!)



Some of the leftovers made a reeeeaally great post-run breakfast-- with 2 slices of toast, vegan butter, and frozen grapes.
Other fun ways to enjoy ratatouille? Wrap some up in a tortilla, and you can call it either of these two snazzy names:
1. Rata-tilla
2. Wrap-tatouille


Yeah, there are millions of ratatouille recipes floating around the internet. But-- why not?-- I'm going to add mine to the bunch.

Little Vegan's Rat-a-tat-ouille

(I tripled the recipe to get the amount shown in the first picture. This recipe freezes well.)

1 medium onion, chopped
2 red peppers, chopped
1 green pepper, chopped
2 cloves garlic, pressed (I always add a bit more, but then again, I am a garlic fiend)
½ lb eggplant, cubed
1 ½ lb zucchini, sliced
3 tbsp fresh basil, minced
1 tsp salt
1/8 tsp freshly ground black pepper

Sauté all the ingredients in your sautéing liquid of choice, until the veggies are tender. (Conversely, you can just combine all the ingredients in a big pot and cook. This is my preferred method, because I like making a huge batch, and it won’t all fit in a sauté pan.) Serve hot.

I also saw that movie recently (the begining of the summer) and tried my hand at ratatouille too! I loved the movie! So cute and great for foodies like us!

I love that movie! It really is too cute. And your recipe for ratatouille sounds delicious- nothing hits the spot quite like a big ol' pot of yummy vegetables!

CCV, I did the exact same thing after I saw Ratatouille! I'd been eating this lovely dish for ages, as it was one of the first French dishes I ate while living in France over 10 years ago and finally made some from scratch after seeing the film. I made mine w/ quinoa on the side, but brown rice is perfect, too! I love your ideas for variations. :)

Though it sounds so simple, I've never had ratatouille. Loved the movie though! I bet it was the shiz over some brown rice!

I still haven't seen that movie! It looks so cute! And I've never eaten ratatouille either...your version is delightful - I am digging the entire list of ingredients!

I LOVE THAT MOVIE!!! it is so cute!! i had an insatiable craving for ratatouille for the longest time afterwards! i love how simple and fresh and tasty ratatouille is! pure yum.

I'm so glad you liked the movie! I had the same reaction -- seeing it really made me crave ratatouille also! And you are the funniest thing ever (rata-tilla and wrap-tatouille, who thinks of that?! Genius!!). Your ratatouille looks sooo delicious that it is making me crave it all over again. The sad part is that I tried the dish for the first time just last Thursday. We made it in our cooking class that's required for the nutrition major. It was the only vegan recipe on the day's agenda, but boy, was it more delicious than I had ever hoped for! I even got to take leftovers and had some for dinner. Here's to ratatouille!!!

That movie is SO cute!! Hmm, I really ought to try this ratatouille dish...J has been asking for it since we watched the movie and now I've seen it on your blog so I ought to get cooking! Despite the fact it's spring here now it's still fairly cold and it sounds like a great warming dish.

Looking forward to hearing about your birthday celebrations. Hopefully it involves chocolate!!

Is that not the cutest movie? I watched it in French class (in French) and I loved it :) That looks like some mighty fine ratatouille, I would totally eat all of that for one meal, hehe.

I also like cooking in large batches...I enjoy cooking, but it takes me sooo long to make stuff sometimes...so especially when I'm in school and busy, I like to make a bunch. Then I end up eating the leftovers for days until I'm sick of it...I think maybe I should considering freezing more stuff!! :)

This could be just the thing I'm after, I've got a pretty big collection of courgettes waiting to be turned into something tasty. Simple recipes are always the best! "throw everything in a pan, cook...eat!"
