Two for One

Two recipes, One post.


First off, my recipe for crepe-cakes... not because it's anything special, but because I received a lot of requests. So here ya go! (Shown with Apple Pie Pudding)



Katie's Crepe-Cakes for One

Ingredients:
  • 1/4cup whole wheat pastry flour
  • 1/4 cup liquid, plus 1/8 cup liquid (or more, but start out with 1/8 cup, because you can always add more, but can't take any away!)
  • salt (I use a little less than 1/8 tsp)
  • 1/8 tsp to 1/4 tsp Ener-G egg replacer (I use 1/8 tsp)
  • Optional: If you feel so inclined, you can add sugar and/or cinnamon. I almost always add lotsa cinnamon!

Procedure:

  • Cook these little guys like you would pancakes (on low heat) but don't flip 'em. Watch out; they're fragile little fellas!
  • I like to make up a bunch of servings at once and fridge or freeze the leftovers. To freeze, just put a small piece of wax paper in between each crepe-cake.

Banana Brulee Oatmeal (or Oat Bran)

As I wrote in my earlier post, it's not this oatmeal concoction's ingredients that make it special, but the cooking method. (That's Wheatberry Brulee in the photo.)

Ingredients:

  • 1 serving oats or oat bran (or bulgur or wheatberries or barley or speltberries! You know how I love my grains!)
  • non-dairy milk of choice
  • banana
  • salt, to taste
  • I like it with just these simple ingredients, but here are some yummy possible add-ins: brown sugar, maple syrup or agave, cinnamon, strawberries (a la Christie), peanut butter, chocolate chips, vanilla extract, raisins, coconut shavings and dried pineapple... the list goes on.

Procedure:

  • Cook up the oatmeal/oatbran as you normally would, either using all non-dairy milk or a combination of milk and water (I use a combination).
  • In a separate bowl, melt however much banana you want in the microwave until it's all caramelized/gooey. You ALL need to try melting your banana before putting it in oatmeal; it just adds soooo much to the oatmeal flavor! (Well, unless, like my oddball sister, you don't like bananas. Just kidding, Sis. You know I love ya!)
  • Now, stir the melted banana into your oatmeal.
  • My favorite part-- no, you don't *have to* do this... but it makes it so much yummier (it mixes the caramelized banana in nicely)!-- take your hand blender and blend everything together so it's a nice pudding-y consistency.
  • Oh no wait... this is my favorite part: EAT your pudding concoction!

Get excited, people, because I have another oatmeal-creme-brulee recipe (which actually uses ramekins, like real creme brulee) in store during one of my upcoming Theme Weeks!


Chocolate-Covered Words of the Day

1. Today, my mom informed me that after seeing the interview with Sarah Palin last night on MSNBC, she will abstain from eating turkey on Thanksgiving! True, she's not giving up meat completely from here-on-out. But this is a huge step (especially since she watched the censored version! What would she have thought had she seen what really goes on at a slaughterhouse?).

2. More happy news! The best part of being a blogger is definitely the wonderful people I've met through this community. Two such lovely people are Jen, of That Pain in the Ass Vegan, and DJ, of Skint Vegan. Thank you both so much for the awards you passed on to me! I jump up and down whenever I see my name on another blog because it makes me feel like a celebrity (ok, and now, having admitted that, I feel like a dork!)

3. Less than a week 'til Product-Review Week!

4. Yes, I know I still owe you one mushroom stroganoff recipe. It may be five years from now, but I promise I will post it!

5. I'm sure that tonight you'll forgive me for not commenting on/reading other blogs, because I am going out on a date with a certain someone...

Hey Kt, I still do not see where Sarah Palin is not eating turkey...the video of her on the farm is offensive and disgusting to vegans. I would be interested to see where she says she's abstaining from turkey for Thanksgiving...

ooooh i was totally gonna ask you about the boy situation. have fun!!! i saw that sarah palin clip too. i definitely will not be eating turkey on thursday - but cranberry sauce and sweet potatoes and stuffing are a MUST ;)

oh, no, don't feel bad that it didn't work! the bananas were a bit old, forgotten in the freezer for months... I microwaved them and they turned out reeeeaaaally dry. So it's my fault, nothing to do with your recipe...

The batter should be pretty liquidy. Try it with the 1/4cup plus 1/8cup liquid. If, after trying that, the crepes are too thick for you, then you can add more liquid, but I’d start with that amount first so you don’t add too much liquid and thus have to throw the batter out!

As for when they’re done… I guess you’ll have to experiment with this, because I don’t have a specific time of how long they take (and depending on the size, some will take longer than others). I don’t know that there’s really a tell-tale sign either… well, except if you go to lift the cake up with a spatula and some of the batter sticks to the spatula, it’s not done yet! If the batter doesn’t stick, then any time you want to take the cake off is fine :o).
