Besides, it is in the humble opinion of this chocolate-covered vegan that "Yumlicious" is a much more exciting made-up word than Rachael Ray's word. Yum-o? How about Lame-o!
Katie's Choco-licious Chocolate Pudding(Inspired from a comment by the lovely Cecilia)
Makes 2 servings, about 1/2-cup each (but you can easily double or halve the recipe)
Ingredients:
- 2-4 teaspoons cocoa powder (I use 2tsp Hershey's Extra Dark Cocoa)
- 1 and 1/3 cups non-dairy milk of choice (I use almond milk)
- 2 heaping teaspoons agar agar flakes (I use 2; the more you use, the thicker the pudding)
- Less than 1/8 teaspoon salt (like maybe 1/16th of a tsp)
- A tiiiiny drop of almond extract (not even 1/8tsp—this stuff is strong!), if you wish (I always add it.)
- And of course you’ll want to add some sugar, unless you like your chocolate pudding super-tart like I do (My mom says I was born without a sweet tooth… but with three chocolate teeth in its place!)
Procedure:
- Measure the non-dairy milk into a pot. Bring to a boil with the agar flakes, salt, cocoa powder, and almond extract, if using.
- After it starts to boil, add the sugar, then lower to a simmer until the agar flakes pretty much dissolve.
- Turn off heat and leave for a few minutes to cool, then cover and stick in the fridge.
- Later, when it’s cooled and gelled, use your hand blender! (Alternatively, transfer the contents of the pot to a regular blender or food processor.)

Now, as for eating: This tastes AMAZING if you stir in a little Soyatoo whipped cream just prior to eating.
(Don't just put the whipped cream on top; stir it in, sistah!)

I like unsweet chocolate, too! My favorite chocolate bars are the super dark ones, with 88 or 89% cacao. I totally wanna try a 100% cacao one, though! I dare you first, hehe.
I've been specifically craving chocolate pudding lately, believe it or not! Such a classic technique to add a little almond extract in there, yum! Another way to bring out extra chocolate-ness is to put a tiny bit of expresso- you can't really taste it but it enhances the chocolate.

Katie - loving that pudding recipe. Usually I use soft tofu and then whir it up with my hand blender, but I think I might give this one a try. And for the record - you can do ANYTHING that fergie or beyonce can do!
OOOOoo, I'm so glad you like the pudding :D I haven't tried it with whipped 'cream' yet (coz there's no soy whipped cream here in Perth) but eating it with chocolate sauce is AWESOME! Btw, the other day, I drizzled a melted piece of dark chocolate over the pud, O.M.G. AMAZING!!!!

Ok, I just realized that Jell-O Instant pudding mixes (like vanilla, CHOCOLATE, and some others) are totally vegan!! That is, if you don't prepare it with cow's milk. I'm hoping that when prepared with non-dairy milks it still yields the desired results!
But this recipe is a great way to use some of my agar powder! After shelling out $1.99 per OUNCE I've got to use it for only the best recipes!
chocolate pudding is so yummy! ive used the cornstarch and silken tofu methods before, but never with agar. this look so creamy and rich! and very yumilicious with the soyatoo :)
I wish agar flakes would work for me. Last time I tried to use them, I failed. But Urban Vegan posted some helpful tips on her site, so next time, I'm consulting that first.

hellooo, chocolatey puddingy perfection. I looooove mixing in the whipped cream and making it all swirly, it is clearly the best part of eating pudding.

I just made it and it even tastes good hot! (You know it's good when you can't wait for it to cool down!). Also, I doubled the recipe and I added a little more than 1/4 cup of sugar. Yum. I got the agar agar flakes at a small local asian grocery store.
